Basque Cheesecake Recipe

Ingredients for Basque Cheesecake:
– Cream cheese: 350g


– Eggs (3 whole eggs, 1 yolk): 4


– White sugar: 100g


– Heavy cream: 200g


– Cornstarch: 10g


– Cake mold: 6-inch Basque cheesecake mold



Method for making Basque Cheesecake:


Step 1: Prepare the ingredients and a 6-inch cake mold.


Step 2: Use a soft spatula to mix the softened cream cheese and white sugar together. This step is crucial; ensure it is done carefully and wait for the cream cheese to soften.


Step 3: Beat 3 whole eggs and one yolk together until well mixed.


Step 4: Gradually add the beaten eggs to the cream cheese mixture in three parts. Add a small amount at a time to ensure even distribution and prevent lumps.


Step 5: Pour in the sifted cornstarch and mix well.


Step 6: Add the heavy cream all at once and mix until smooth.


Step 7: Sift the entire cake batter to achieve a smoother and creamier texture.


Step 8: Cut baking paper, start by cutting a large square and folding the first triangle.


Step 9: Fold the second triangle.


Step 10: Fold the third triangle.


Step 11: Fold the center angle.


Step 12: Align the folded corner with the center of the cake mold and mark the radius.


Step 13: Use the marked point as a fold line, fold and trim off the excess paper along the edge of the corner.


Step 14: Open one fold and cut along the middle vertical crease to the horizontal crease.


Step 15: After opening, naturally form a circle that matches the baking mold.


Step 16: Place the cut baking paper into the cake mold to fit perfectly.


Step 17: Pour the cake batter into the mold and tap it 1 or 2 times to remove air bubbles. Preheat the oven to 230 degrees.


Step 18: Bake for 20-25 minutes (oven brands may vary in temperature control, so adjust according to your own oven).


Step 19: The freshly baked cake should be soft and wobbly. Allow it to cool.


Step 20: After cooling for an hour, it will settle a bit. Ensure it is completely cooled before refrigerating for 5-6 hours.


Step 21: It is recommended to prepare the cake before bedtime and enjoy it for breakfast the next day.
